SHRIMP FRIED RICE Why order take-out? This homemade version is so much healthier, cheaper and tastes a million times better! Prep Time  10 minutes Cook Time  20 minutes Total Time  30 minutes Ingredients 3 tablespoons soy sauce 1 tablespoons sesame oil 1/2 teaspoon ginger powder 1/2 teaspoon white pepper 2 tablespoons olive oil 1 pound medium shrimp, peeled and deveined Kosher salt and freshly ground black pepper, to taste 2 cloves garlic, minced 1 onion, diced 2 carrots, peeled and grated 1/2 cup frozen corn 1/2 cup frozen peas 3 cups cooked rice 2 green onions, sliced Instructions In a small bowl, whisk together soy sauce, sesame oil, ginger powder and white pepper; set aside. Heat olive oil in a large skillet or wok over medium high heat. Add shrimp, and cook, stirring occasionally, until pink, about 2-3 minutes; season with salt and pepper, to taste; set aside. HEALTHY TUNA STUFFED AVOCADO These avocados are stuffed with a flavorful southwest mixture of tuna, bell pepper, jalapeno, and cilantro. No mayo necessary here! Cook Time 10 mins Time to Make It 10 mins   A healthy tuna and avocado lunch! Author:  Rachel Farnsworth Ingredients 4 avocados, halved and pitted 3 (4.5 oz) cans tuna, drained 1 red bell pepper, diced 1 jalapeno, minced 1 cup cilantro leaves, roughly chopped 1 lime, juiced salt and pepper Instructions Scoop out some of the avocado from the pitted area to widen the "bowl" area. Place the scooped avocado into a medium-size mixing bowl. Mash it with a fork. Add the tuna, bell pepper, jalapeno, and cilantro to the mixing bowl. Pour lime juice over.
